outdoor field work - sounds like primary research. If this is the case, assign individual or teams of students a video camera and have them record the "expert" or the even or the field work.
Students may do nothing with the video itself. The raw, unedited video can exist as a record of the event or the person talking. The video may be nothing more than pure and necessary primary research.
Kodak Zi6 is a great camera - still and video. If neither a Zi6 or a Vado is available, students can use their built in iSight
